Try this chilled tomato soup! Chock-full of raw vegetables, both whole and juiced, your body will thank you afterwards.

Want something light and refreshing for lunch on a stifling day? Or maybe just feeling too lazy to heat up the stove? Try this chilled tomato soup! Chock-full of raw vegetables, both whole and juiced, your body will thank you afterwards. The exotic watermelon-avocado garnish elevates this dish above the ordinary, making it a wonderful summer dinner party appetizer. A True Food Kitchen recipe.

Food as Medicine

The antioxidant lycopene gives tomatoes their red color, may help protect against prostate cancer, and has been shown to slow macular degeneration.

Ingredients

2 jars organic tomatoes
1 quart ice cubes
1 cucumber, juiced
2 celery stalks, juiced
2 lemons, juiced
1 carrot, juiced
1 red pepper, juiced
1/4 cup *agave nectar
1 tablespoon sea salt
1 pinch cayenne pepper

GARNISH:
1/4 cup watermelon, diced
1/4 cup cucumber, diced
1/4 cup avocado, diced
1/4 cup cilantro sprigs
1/4 cup Cotija cheese

Instructions

Combine all ingredients & blend with a hand blender until smooth. Chill for two hours before serving.

* In light of recent research, Dr. Weil no longer recommends agave syrup and suggests substituting an equivalent amount of maple or glucose syrup.
