Sweet Potatoes: Free Radical Fighters!

A universally appealing root vegetable, sweet potatoes are an excellent source of vitamins A and C - natural antioxidants that help neutralize free radicals. Many varieties have moist orange or yellow flesh, and are wonderful mashed, served as baked “fries,” or simply baked whole. When choosing, look for ones free of blemishes and cracks, and don’t worry if they are misshapen - it does not affect the taste.

Simple tip: If preparing several for a meal, choose sweet potatoes that are about the same size and shape to avoid over- or under-cooking.
